Brown Rice for Breakfast

So many of you were inspired by my Quinoa for Breakfast post, I thought I’d bring you a new healthy breakfast option, brown rice for breakfast!

Why Brown Rice?

Worlds Healthiest Foods sums it up well: The health benefits of brown rice continue with its fiber, which has been shown to reduce high cholesterol levels, one more way brown rice helps prevent atherosclerosis. Fiber also helps out by keeping blood sugar levels under control (PCOS girls, take note!)

I am obsessed with this recipe because it’s super easy, customizable and delicious. For me, the toasted sesame oil is the secret flavor here, but I’ll let you try it out and decide for yourself.

I’ll give you the rundown of how I made my brown rice breakfast bowl and I’ve got a few additional tips for you down below!



  1. scallions, thinly sliced, plus more for garnish
  2. ounces curly spinach, stemmed (8 packed cups)
  3. ¼ teaspoon kosher salt
  4. ¼ teaspoon pepper
  5. tablespoons toasted sesame oil
  6. tablespoons distilled white vinegar
  7. teaspoons toasted sesame seeds, plus more for garnish (I didn’t have sesame seeds, so I added sunflower seeds for crunch)
  8. cups cooked brown rice, warm
  9. avocado, thinly sliced
  10. radishes, thinly sliced


Step 1

Cook the scallions in a large skillet over medium, add the spinach, salt, and pepper and cook just until wilted, about 1 minute. Note: I cooked my brown rice ahead of time, so I warmed it up in the skillet during this step.

Step 2

Whisk the oil, vinegar, and sesame seeds in a small bowl. I didn’t have sesame seeds so I used sunflower seeds.

Slice radishes and avocado, thinly


Step 4

Divide the brown rice, spinach mixture, avocado, and radishes in the bowls. Garnish with scallions and sesame seeds. Drizzle with the sesame dressing and serve warm, with more dressing on the side.



Top with a fried egg for protein!

Additional Tips: If you want to save time, make a pot of brown rice the night before and reheat once the other ingredients are ready. If you’re making this for one or two people, you could also get frozen brown rice from your grocery store, I like frozen brown rice because it has smaller portions and cooks in a few minutes.

You can also, try other green vegetables in your bowl: Broccoli, zucchini, and Swiss chard all work well.

Plus Size Fitness: Almond Flour Chocolate Chip Cookie Recipe

They say that 80% of healthy living is what you eat… of course, that’s the part I struggle with the most.

I have a habit of of depriving myself of “bad foods” and then binge eating later on the very foods that I was trying to avoid (*blush* does anyone else do that?).

I think a more sustainable plan is to cook healthy foods that will support my healthy lifestyle and satisfy my cravings. Last night I made a batch of chocolate chip cookies. Instead of using pre packaged dough or a recipe with white sugar and flour, I made my cookies using almond flour and agave. Two awesome things about this recipe is that its only four steps and the dry ingredients can be found online at lower prices. These cookies expand, so a small teaspoon of dough is all that’s needed for each cookie…

Clean Eating Almond Flour Chocolate Chip Cookies
I’m excited to have this quick/easy recipe in my arsenal… A cookie and a glass of coconut milk will be a nice treat this week!

Almond Chocolate Cookies

(2 1/2 cups) almond flour (order here)

(1/2 tsp) salt

(1/2 tsp) baking soda

(1/2 cup) grapeseed oil (order here)

(1/2 cup) agave nectar (order here)

(1 tbsp) vanilla

(1/2 cup) dark chocolate chips

(1/2 cup) sliced almonds

(350 F). Line baking sheets with parchment paper. In a large bowl, combine almond flour, salt and baking soda.

In a medium bowl, combine grapeseed oil, agave and vanilla. Add to almond flour mixture and mix until thoroughly combined. Fold in chocolate chips and almonds.

Spoon dough one heaping teaspoon at a time onto baking sheet and press down to flatten.

Bake for 7 to 10 minutes, until lightly golden. Let cookies cool on baking sheets for 20 minutes.

Healthy Comfort Food? | Plus Size Fitness | Weight Loss

As an emotional eater, sometimes I can fool myself into thinking that the best thing to do after a hard day is indulge in my favorite foods. For me, the most awesome comfort foods in the world are:

Fresh Baked Chocolate Chip Cookies (with a cold glass of almond milk)

Mac and Cheese (Truffle Mac and Cheese is a new favorite)

Quesadillas (melted cheese inside of a tortilla, extra points if there’s guacamole involved)

Homemade Chocolate Cake (you know when you place a scoop of ice cream on top and it starts to melt right in… *deep sigh*)

Some of my comfort foods are sweet, some are savory but the one thing they have in common?

They’re all WARM!

During #PSPfit Cycle 3, Abra brought up a good point on our weekly call when the girls were talking about comfort foods. She asked us if perhaps we’re finding comfort in the warmth of our food instead of the indulgent dishes we deem comforting.

A light bulb went off in my head. As an unmarried girl who lives alone, how often do I have a hot meal?

So, for the past few weeks I’ve been working hard to incorporate warm dishes into my meals. I add soup to my lunches at work (my office is freezing in the summer, so it feels good).

At home I’ve been making warm salads. Sometimes I sautee the ingredients fresh and create a warm salad and sometimes I make a salad cold and then put it in the oven until its warm. Warm Kale salads with salmon are my favorite!

As part of my private Nutrition Coachings with Abra, she sent me this quote from Genene Roth who wrote an amazing book called Women, Food and God.

Hot meals are real food. Hot meals nourish you. A Snickers bar tastes good, but after you’ve finished it, you don’t feel as if you’ve eaten. So you scrounge around for more and soon you find yourself standing in your kitchen eating cold pizza from three days ago.

If your life is arranged so that you don’t have time to eat a hot meal everyday–even if it’s soup or scrambled eggs, even if it’s vegetable pot pie heated in the microwave–it’s time to question your priorities.

Eating one hot meal a day is a way of saying that you want the real thing: a life of main courses. It is a way to begin giving yourself the real thing.

My issues with food are never going do go away, but I can begin to own them. Instead of being dragged down by comfort food that doesn’t support my health, I can redefine what is comforting to me so that I get what I need from food emotionally and physically.

The next time you’re craving an unsupportive comfort food, see if you can do a “hot remix” of a healthy option… it might make you feel better from the inside out. Just a thought!

My Shift from “Get Skinny” to “Get Healthy” | #PSPfit Cycle 3

I’m always looking for new ways to measure healthy curves success… Do you have specific things you do to celebrate healthy curves outside of the scale or what size you wear?

One of my favorite things about the #PSPfit Bootcamp community is watching the bootcamp babes define success for themselves. Whether its quitting smoking, cooking more or taking a challenging gym class there are so many curvy girls making positive changes towards our health and in my opinion, that’s success.

For me, taking “skinny” out of the equation is changing my definition of success. I’ve spent half of my life obsessed with a body ideal that I’m pretty sure isn’t for me. If I keep focusing on skinny, I’ll always feel like a failure, but as I focus on healthy, I feel like I can set attainable goals for myself. Instead of a number on the scale or a pants size, success to me is doing the right things for my body (fitness/food/self care) and loving my body every step of the way.

Changing my focus from “Get Skinny” to “Get Healthy” has made a world of difference as I try to navigate healthy curves, PCOS and my body. What’s Easier for you: Food or Fitness?

When it comes to food, I’ve got issues. I’ve been running from the image of a fat girl shoveling food into her mouth since I was eight. I never wanted to be seen eating too much food.

This meant as a teen I ordered fries and a milk shake because it was visually less food than a burger/fries. Though I know now that I’d be better off with the burger than the sugary milkshake.

I’m not in high school anymore, but old habits are hard to break.

When I first started working with my nutrition coach, she had me eating so much food and I was terrified. It was so hard for me to accept that it was better for me to eat large quantities of clean/unprocesed foods than to eat tiny portions of lean cuisine… then I lost 10 pounds in two weeks and I was like, oh… okay!

I’ve spent my entire life hearing that eating is what’s making me fat, which makes it almost impossible to imagine that food is what I need to get my weight and/or health under control, even though I see it happening. Truth be told, I can workout for 7 straight days and lose 2-3 pounds… or I can eat clean for 7 straight days and lose 4-6 pounds.

Fitness is always the easier choice for me, but getting my food under control is always the right choice.

1 can organic black beans, well rinsed

1 small bell pepper, chopped
1/4 jalapeno, chopped
1/4 red onion, chopped
handful of chopped parsley
1/2 avocado, diced
olive oil, lime juice, salt and pepper

Plus Size Fitness: PCOS, Goddess Dressing, Body Weight Workouts (Video)

I woke up on January 1st feeling really gross. My scalp was flaky and itchy due to an eczema flare up. My face was broken out, my period had been two days late (not a good sign for PCOS) and I had crazy swelling in my ankles.

When I decided to take December off from my plus size fitness life, I assumed I’d gain weight but I didn’t anticipate the other ways I’d fall apart. I’m starting to realize that what I eat affects more than just my weight.

After starting the January Jump Start with the #PSPfit girls, if I wasn’t 100% sure that clean eating is the best option for me, I am now. One week of clean eating and my ankles are no longer cankles, face is clear, aunt flow should be back to her regularly scheduled visits and my eczema flare up has subsided.

So, I guess that means no more month long “breaks”, huh? *looks away*

#PSPfit $21 January Jump Start: You Can Join From Any City! (FAQ’s)

Its official, your girl definitely got a little “puffy” over the holidays (definitely not good for my PCOS) so, I’m ready to bounce back.

The #PSPfit January Jumpstart we’ve planned is getting me back to the basics and based on the emails I’ve been getting I wont be doing this alone… I’m stoked!

The January Jumpstart is 21 days for $21 dollars in order to let everyone “dip their toe in the water” and see what #PSPfit is all about. A full on #PSPfit boot camp is no joke, so we want to make sure everyone has a good foundation as we go hard in 2014.

Lots of questions have been coming in about the #PSPfit January Jump Start. Below are the top three questions I’ve been answering via email (including a program breakdown). 1.) I don’t live in NYC, can I still join #PSPfit? YES MA’AM! 90% of #PSPfit happens via email, conference calls and our invitation only facebook group (moderated by our nutrition coach and myself). You don’t have to live in NYC to do #PSPfit and this round is going to be 100% virtual. We’ve got #PSPfit Boot Camp Babes all over the US, London, Canada, The Phillipines, Australia… etc. so join the bunch, no girl is excluded!

So… every time I renew my dedication to fitness, it starts with a shopping trip for new gym clothes. I don’t think so, but because people assume big girls don’t work out, it can be hard to find.

Can I Still Have a Social Life? #PSPfit

Do you ever feel like the minute you decide to get on track with your eating, you become super popular?

Last Thursday, I decided that I’d get a jumpstart on Clean Eating so that I could be in a good mindset when #PSPfit boot camp starts. I committed to eating 100% clean (No processed food, no fast food, no alcohol). Since then, I’ve had invites to dinner, drinks and this afternoon I was roped into baking a cake for a company fundraiser, pray for me… my apartment smells amazing but because of my binge eating issues, my plan is to make this cake and not eat any of it *deep breath*

I’ve come to the conclusion that there’s never a “good time” to get your eating on track. There’s never a month with no birthdays or dates or parties, so I have to start figuring out how my social life works when I’m in the process of loving my body through clean eating, which is the best way I’ve found to manage my PCOS. So, once again its up to me to set my priorities. Right now, with #PSPfit boot camp coming up, its easy for me to make the better decision, but its important for me to focus on how to make those decisions when I’m not hyped up to get healthy with you guys.

In #PSPfit Cycle 1, our Nutrition Coach, Abra taught us that ordering off the sides menu is a good place to find clean foods in a restaurant. So, last week when Robert and I went to dinner, he ordered wings and fries, I ordered a sauteed spinach and a salad… and I didn’t even steal one of his fries!

I didn’t have any less fun because I ate clean and I didn’t wake up the next morning feeling like I had to “work off last nights meal” at the gym, which is impossible by the way. I’m so happy with my decision, but I need to remember to make the same choice in two months, ya know?

Anyway– I can’t wait for #PSPfit Boot Camp to start, so we can support each other through the social events and figure out how to navigate the holiday party circuit and still reach/maintain our goals.
